Overview

Macaroni and cheese is a classic baked or stovetop pasta dish made with cooked macaroni pasta and a creamy cheese sauce. The key to a perfect version is balancing three things:

  1. Properly cooked pasta
  2. Smooth white sauce (roux-based bรฉchamel)
  3. Well-melted cheese blend

If any one of these is wrong, the texture or taste will suffer.


Ingredients

Pasta

  • 300 grams elbow macaroni
  • Enough water to boil pasta
  • 1 tablespoon salt (for boiling water)

Why elbow macaroni?

Elbow macaroni holds cheese sauce inside its curves, giving better flavor in every bite.


Cheese Sauce Base (Roux + Milk)

  • 4 tablespoons butter
  • 4 tablespoons all-purpose flour
  • 3 cups milk (preferably warm)
  • 1 cup heavy cream (optional but recommended for richness)

Explanation:

This is called a roux-based sauce. The flour and butter form a thickener that prevents the cheese sauce from becoming watery.


Cheese Mix (Very Important Part)

A good mac and cheese always uses multiple cheeses:

  • 2 cups cheddar cheese (sharp preferred for strong flavor)
  • 1 cup mozzarella cheese (for stretch and melt)
  • ยฝ cup parmesan cheese (for salty depth)
  • ยฝ cup processed cheese (optional but gives extra creaminess)

Why mix cheeses?

  • Cheddar = flavor
  • Mozzarella = stretch
  • Parmesan = depth and saltiness
  • Processed cheese = smooth texture

Using only one cheese makes the dish flat or oily.


Seasoning

  • 1 teaspoon salt (adjust after tasting)
  • ยฝ teaspoon black pepper
  • ยฝ teaspoon garlic powder
  • ยฝ teaspoon onion powder
  • ยฝ teaspoon mustard powder (important, enhances cheese flavor)
  • Optional: pinch of paprika or chili flakes

Optional Topping (for baked version)

  • ยฝ cup breadcrumbs
  • 2 tablespoons melted butter
  • 2 tablespoons parmesan cheese

Step 1: Cooking the Pasta Properly

  1. Take a large pot and fill with water.
  2. Add 1 tablespoon salt. This seasons the pasta from inside.
  3. Bring water to a strong boil.
  4. Add macaroni. Stir immediately so it does not stick.
  5. Cook until al dente, meaning firm to bite. Do not overcook.
  6. Drain the pasta.
  7. Optional: Add a few drops of oil and mix lightly to prevent sticking.

Important note:

If you are baking later, slightly undercook pasta because it will continue cooking in the oven.


Step 2: Making the Roux (Base of Cheese Sauce)

  1. Place a pan on medium heat.
  2. Add butter and let it melt completely.
  3. Once melted, add flour.
  4. Whisk continuously to form a smooth paste.
  5. Cook for 1โ€“2 minutes.

What you should notice:

  • The mixture becomes slightly golden
  • The raw flour smell disappears

This step is very important. If undercooked, the sauce will taste floury.


Step 3: Adding Milk (Creating Cream Sauce)

  1. Warm the milk slightly before adding (this reduces lumps).
  2. Slowly pour milk into the roux while whisking constantly.
  3. Do not stop stirring or lumps may form.
  4. Keep cooking for 5โ€“7 minutes.

What happens here:

  • The sauce slowly thickens
  • It turns smooth and creamy
  1. If using cream, add it now and mix well.

You should now have a thick white sauce known as bรฉchamel.


Step 4: Adding Cheese

  1. Lower the heat to very low.
  2. Add cheese gradually, not all at once.
  3. Stir until each addition fully melts.
  4. Continue until all cheese is incorporated.

Important tips:

  • Never add cheese on high heat
  • High heat causes oil separation and grainy texture

Result:

  • Smooth, thick, glossy cheese sauce
  • Rich aroma
  • Slight stretch depending on cheese mix

Step 5: Seasoning the Sauce

Add:

  • Salt
  • Black pepper
  • Garlic powder
  • Onion powder
  • Mustard powder

Mix thoroughly and taste.

Why mustard powder?

It does not taste like mustard directly. Instead, it enhances and sharpens cheese flavor.


Step 6: Combining Pasta and Sauce

  1. Add cooked macaroni into cheese sauce.
  2. Mix thoroughly until every piece is coated.
  3. Let it sit for 1โ€“2 minutes so pasta absorbs flavor.

At this point, you already have stovetop mac and cheese.


Step 7: Stovetop Version (Ready to Eat)

If you want creamy mac and cheese without baking:

  • Serve immediately while hot
  • Optionally top with extra cheese or black pepper

This version is soft, creamy, and saucy.


Step 8: Oven-Baked Version (Recommended)

  1. Preheat oven to 180ยฐC.
  2. Grease a baking dish with butter.
  3. Pour mac and cheese mixture into dish.
  4. Spread evenly.

Topping Preparation

  1. Mix breadcrumbs with melted butter.
  2. Add parmesan if desired.
  3. Sprinkle evenly over the top.

Baking

  1. Bake for 20โ€“25 minutes.
  2. Top should become golden brown.
  3. Optional: Broil/grill for 2โ€“3 minutes for crispy crust.

You will get:

Common Mistakes to Avoid
