Ingredients

  • 2 cups (200 g) almond flour

  • 2/3 cup (121.33 g) Powdered Swerve Sweetener, or other powdered erythritol

  • 1/4 teaspoon salt

  • 1/2 cup (113.5 g) butter, softened

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 3 ounces (113.4 g) sugar-free dark chocolate, chopped

  • 1/2 ounce (14.17 g) cocoa butter

  • Sugar-free sprinkles, if desired

Directions

  • Heat the oven to 325°F (163°C) and prepare two baking trays by lining them with parchment paper or silicone baking mats.
  • Place the almond flour, powdered Swerve sweetener, and salt into a food processor. Pulse several times until the dry ingredients are thoroughly combined.
  • Add the softened butter in small pieces and pulse again until the mixture resembles fine crumbs.
  • Add the egg and vanilla extract. Continue processing until the dough gathers into a smooth, soft ball.
  • Spoon the dough into a piping bag fitted with a large open star tip, such as an Ateco #824. Pipe the dough into tight swirls about 2 inches in diameter, leaving a little space between each cookie. If the shape isn’t right, simply place the dough back into the piping bag and pipe again.
  • Bake for 18 to 20 minutes, or until the edges are lightly golden while the centers remain pale.
  • Remove the baking sheets from the oven and turn the oven off. Let the oven cool for about 15 minutes, then place the cookies back into the warm oven for another 15 to 20 minutes to help them become crisp.
  • Transfer the cookies to a wire rack and let them cool completely.
  • In a heatproof bowl set over gently simmering water, melt the sugar-free dark chocolate together with the cocoa butter, stirring until smooth.
  • Dip one-half of each cooled cookie into the melted chocolate, then place them on a sheet of wax paper. Finish with sugar-free sprinkles if desired and leave the cookies undisturbed until the chocolate has fully set before serving or storing.
