This recipe makes a crispy, protein-packed pizza using cottage cheese in the dough. The crust becomes golden on the outside while staying tender inside.
Ingredients
For the Pizza Base
- 1 cup (225g) cottage cheese
- 1 large egg
- 1 cup (100g) oat flour (or finely blended oats)

Instructions
Step 1: Prepare the Dough
- Preheat oven to 220ยฐC (425ยฐF).
- Add cottage cheese and egg to a blender.

- Spread a thin layer over the crust.
- Add mozzarella cheese.
- Add mushrooms, peppers, onions, and pepperoni if using.
Do not overload the pizza with toppings or the crust may soften.
Step 5: Final Bake
- Return pizza to the oven.
- Bake for 8โ10 minutes.
- For extra browning, broil/grill for 1โ2 minutes at the end.
- Remove and let rest for 3 minutes.
