Crispy Cottage Cheese Pizza

This recipe makes a crispy, protein-packed pizza using cottage cheese in the dough. The crust becomes golden on the outside while staying tender inside.

Ingredients

For the Pizza Base

  • 1 cup (225g) cottage cheese
  • 1 large egg
  • 1 cup (100g) oat flour (or finely blended oats)
  • ยฝ cup (60g) all-purpose flour
  • 1 tsp baking powder
  • ยฝ tsp garlic powder
  • ยฝ tsp Italian seasoning
  • ยฝ tsp salt
  • ยผ tsp black pepper
  • 1 tbsp olive oil

For the Pizza Sauce

  • ยฝ cup pizza sauce or tomato sauce
  • 1 clove garlic, minced
  • ยฝ tsp oregano
  • Pinch of salt

Toppings

  • 1 cup shredded mozzarella cheese
  • ยฝ cup sliced mushrooms
  • ยฝ cup sliced bell peppers
  • ยผ cup red onion, thinly sliced
  • 8โ€“10 turkey pepperoni slices (optional)
  • Fresh basil leaves

For Extra Crispiness

  • 1 tbsp olive oil
  • 1 tbsp grated Parmesan cheese

Instructions

Step 1: Prepare the Dough

  1. Preheat oven to 220ยฐC (425ยฐF).
  2. Add cottage cheese and egg to a blender.
  3. Blend until completely smooth.
  4. Transfer to a bowl.
  5. Add oat flour, all-purpose flour, baking powder, garlic powder, Italian seasoning, salt, and pepper.
  6. Mix until a soft dough forms.
  7. Let the dough rest for 5 minutes.

Step 2: Shape the Crust

  1. Place parchment paper on a baking tray.
  2. Lightly oil the parchment.
  3. Put the dough in the center.
  4. Using slightly wet hands, press it into a 10โ€“12 inch circle.
  5. Make the center slightly thinner and the edges slightly thicker.

Tip: A thinner crust becomes much crispier.


Step 3: First Bake (Important!)

  1. Brush the crust with olive oil.
  2. Sprinkle Parmesan over the surface.
  3. Bake for 12โ€“15 minutes until lightly golden.
  4. Remove from the oven.
  5. Carefully flip the crust over.
  6. Bake another 5โ€“7 minutes.

This double-bake method creates a very crispy bottom.


Step 4: Add Sauce and Toppings

  1. Mix the tomato sauce with garlic, oregano, and salt.
  2. Spread a thin layer over the crust.
  3. Add mozzarella cheese.
  4. Add mushrooms, peppers, onions, and pepperoni if using.

Do not overload the pizza with toppings or the crust may soften.


Step 5: Final Bake

  1. Return pizza to the oven.
  2. Bake for 8โ€“10 minutes.
  3. For extra browning, broil/grill for 1โ€“2 minutes at the end.
  4. Remove and let rest for 3 minutes.
