Creamy Chicken Recipe

Creamy chicken is a rich, flavorful dish made with tender chicken pieces cooked in a smooth, creamy sauce. Itโ€™s versatile and can be served with rice, pasta, mashed potatoes, or even low-carb vegetables. The key to a good creamy chicken is properly searing the chicken, building flavor in the pan, and balancing creaminess with seasoning.


Ingredients

For the Chicken

  • 500โ€“700g chicken breast or chicken thighs (boneless, cut into bite-sized pieces)
  • 1 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika (optional but adds flavor and color)
  • 1 teaspoon garlic powder or 3โ€“4 fresh garlic cloves (minced)
  • 2 tablespoons oil or butter (for cooking)

For the Creamy Sauce

  • 1 tablespoon butter
  • 1 medium onion (finely chopped)
  • 3โ€“4 garlic cloves (minced)
  • 1 cup cooking cream or heavy cream
  • 1/2 cup milk (optional, for lighter sauce)
  • 1/2 cup chicken stock or water
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon chili flakes (optional for mild heat)
  • 1 teaspoon Italian herbs or mixed herbs
  • 1/2 teaspoon salt (adjust to taste)
  • 1/2 cup grated cheese (cheddar or parmesan, optional but recommended)

Optional Add-Ins

  • Mushrooms (sliced)
  • Capsicum / bell peppers (sliced)
  • Spinach (fresh)
  • Sweet corn
  • Fresh parsley for garnish

Equipment Needed

  • Frying pan or skillet
  • Wooden spoon or spatula
  • Knife and chopping board
  • Mixing bowl (optional)

Step 1: Prepare the Chicken

Wash and cut chicken into evenly sized pieces so they cook evenly.

In a bowl, season chicken with:

  • salt
  • black pepper
  • paprika
  • garlic powder

Mix well so every piece is coated evenly.

Let it rest for 10โ€“15 minutes if possible. This helps improve flavor.


Step 2: Sear the Chicken

Heat oil or butter in a large pan over medium-high heat.

Add chicken pieces in a single layer (do not overcrowd the pan).

Cook for 3โ€“5 minutes on each side until golden brown.

Do not fully cook the chicken at this stage; it will finish cooking in the sauce.

Once browned, remove chicken and set aside.


Step 3: Build the Flavor Base

In the same pan, add butter.

Add chopped onions and sautรฉ until soft and golden.

Add minced garlic and cook for 30โ€“60 seconds until fragrant.

If using mushrooms or vegetables, add them now and cook until softened.

This step builds the base flavor of the sauce.


Step 4: Make the Creamy Sauce

Pour in chicken stock or water to deglaze the pan. Scrape the bottom to release all flavor bits.

Lower the heat to medium and add:

  • cream
  • milk (optional)
  • black pepper
  • chili flakes
  • herbs
  • salt

Stir continuously until the sauce becomes smooth and slightly thick.


Step 5: Add Chicken Back

Add the seared chicken back into the pan.

Mix well so every piece is coated in the creamy sauce.

Simmer for 8โ€“12 minutes on low heat until chicken is fully cooked and tender.

If the sauce becomes too thick, add a little milk or water. If too thin, simmer longer.


Step 6: Add Cheese (Optional but Recommended)

Add grated cheese and stir until melted.

This makes the sauce richer, thicker, and more flavorful.

Taste and adjust seasoning if needed.


Step 7: Final Simmer

Let everything simmer together for 2โ€“3 minutes so flavors combine properly.

The sauce should now be creamy, smooth, and cling to the chicken pieces.

  • Pasta (fettuccine or penne)
